Meringue cookies are not that difficult to make. Infact some said its so much easier than candy! They key to make them awesome is to make them when the air is dry.... (oven dry it is!)  because humidity affects meringue.

So, here is the tutorial for Meringue Cookies, complimentary of King Arthur for his Sparkling kisses recipe.

Things you need - Ingredients:
  • 4 large egg whites
  • 1/8 teaspoon salt
  • 1/8 teaspoon cream of tartar
  • 1/2 cup (3 1/2 ounces) Baker’s Special, extra-fine, castor, or granulated sugar
  • 1 teaspoon vanilla extract (or the extract of your choice)
  • Sparkling sugar crystals
Lets begin the baking

Step 1: Preheat the oven to 250°F. Lightly grease (or line with parchment) on two large baking sheets.

Note: Bake for 1 hour, then turn off the oven and let the cookies cool in the unopened oven for 2 1/2 hours to 3 hours (1 1/2 to 2 hours for meringues that are chewy in the center, rather than crisp all the way through) And do try and not to peek!.
